Healthy Vegetarian Salad Recipes

Stuffed Cucumber Salad

A Healthy Salad with a twist

Ingredients:

  • 2 medium sized Cucumber
  • 1/4 cup cottage cheese (paneer) or tofu, Grated
  • 1 tbsp soaked channa dal - coarsely grinded
  • Coriander leaves 1 tbsp
  • Salt to taster
  • 1/4 tsp fresh lemon juice
  • 1/4 tsp green chili paste

Procedure:

  • Cut cucumber vertically.
  • Scoop out seeds.
  • Mix all other ingredients in a bowl. You can use the seeds of cucumber also (optional).
  • Stuff this mixture in the cucumber.
  • Chill and serve.

Note:

You can also use other salads like carrot, tomato, olive etc. of your choice for the filling to make it more appealing to your taste buds.

Chilled Stuffed Tomato salad

Tomato Salad with plenty of goodies

Ingredients:

  • 2 medium sized Tomatoes
  • 1/2 Cucumber , Grated
  • 1 tbsp finely shredded Cabbage
  • 1 tbsp Tofu
  • 1 tbsp finely chopped Coriander
  • 1 tsp finely chopped Fresh Mint leaves
  • Coriander leaves 1 tbsp
  • Salt & black pepper powder as required
  • 1/4 tsp green chili paste
  • 1/4 tsp green chili paste

Procedure:

  • Cup tomatoes from the top.
  • Remove all the seeds from tomatoes.
  • Mix all other ingredients in a bowl.
  • Stuff this mixture in the tomatoes .
  • Chill and serve.

Note:

Salad Exotica

Tastey Salad with Exotic veges

Ingredients:

  • 6 Cherry tomatoes
  • 1/2 bowl diced Capsicum
  • 1/2 bowl diced Cucumber
  • 1/2 bowl chopped Iceberg lettuce
  • 1 tbsp Celery
  • 1 tbsp Tomato sauce
  • 1 tbsp Cubed Tofu or cottage cheese (paneer)
  • Salt to taste
  • Black pepper powder
  • 1 tsp flaxseed powder

To make Tomato Sauce:

  • 1/2 cup tomato puree
  • 1/4 tsp sugar
  • Salt to taste
  • 1 tsp Black pepper powder
  • 1 tsp garam masala

Procedure:

To make Tomato Sauce:
  • Mix all the ingredients listed under tomato sauce and cook for 10 minutes
  • Cool it and keep aside for later use
To make Salad:
  • Mix all the ingredients in a bowl.
  • Served Chilled

Mayonnaise salad

Tastey Home made Mayonnaise Salad

Ingredients:

For Salad:
  • 1/4 bowl chopped tomatoes
  • 1 tbsp chopped cucumber
  • 1/2 bowl par boiled broccoli
  • 1/2 tsp sugar
  • 1 tsp mayonnaise
  • 1/2 tsp olive oil
  • 1 tbsp finely chopped celery
  • Salt to taste
For mayonnaise:
  • 2 tbsp hung curd
  • 1 tsp salt
  • 1/4 tsp soy sauce
  • 1/2 tsp vinegar
  • 1 tsp mixed herb

Procedure:

To make mayonnaise:
  • Mix all the above ingredients in a bowl and your mayonnaise is ready to use.
To make Salad:
  • Take salad bowl. Mix all above vegetable.
  • Toss with dressing of mayonnaise, olive oil, sugar, celery, salt.
  • Garnish with parsley. Ready to serve
